January 2024 was the beginning of a new year and a new chapter in Clover Hill Vineyards & Winery history – the development of Clover Hill Spirits and the expansion of our product line.

For years, Clover Hill Winery has been making port wines, but the high-proof alcohol used in the ports was produced off site. As the popularity of our port wines grew, so did the desire to do our own in-house distillation.

At the end of 2023, we purchased a custom-crafted diamond head still from Kentucky which allows us to produce vodka, brandy, gin and more! The ‘original’ winery production area and tasting room at the top of the hill in Breinigsville now has been repurposed as the distillery. Winemaker John Skrip III also is the head distiller of Clover Hill Spirits.

Clover Hill Spirits bottles will be sold at all four Clover Hill locations. We also plan to serve a monthly seasonal cocktail at all locations.

Distillery Debut Weekend – November 30 + December 1, 2024

Please join us in officially welcoming Clover Hill Spirits to our selection of hand-crafted products during our Distillery Debut Weekend on November 30 and December 1, 2024. We’re excited to share our spirits with you!

During our debut weekend, we’ll offer complimentary tours of the distillery building each day at 12:30 p.m. and 2 p.m. The tours will include a barrel sample brandy tasting and snacks from The Buttered Crumb.

The following cocktails made with Clover Hill Spirits will be available for purchase:
– Old Fashioned with Brandy
– Fireside with Vodka
– Apple Cider Crush with White Brandy

Music, food trucks and Shop Small specials round out the distillery celebration weekend, which also is the official beginning of the holiday shopping season!

VODKA

Our vodka is an 80 proof (40% alcohol) vodka distilled from corn. It is very neutral in flavor and was distilled to 192 proof before being proofed down to 80 bottle strength. The water used was from the limestone soils of Breinigsville, PA and was charcoal filtered before bottling. It is clear, tasteless, has a very silky mouthfeel and a very smooth finish.

Vodka can be consumed straight, over ice, as a shot or through the most popular option in a cocktail such as a Martini, Moscow Mule, Cape Cod, or Bloody Mary.

WHITE BRANDY

Our White Brandy is made entirely from Clover Hill grapes and wine. It has been distilled four times in our still to 180 proof. It was then proofed down to 80 proof with Breinigsville water, carbon fined and then 0.45 micron filtered. The resulting spirit is very similar to vodka – it is clear and near neutral in flavor but still retains a very slight fruitiness that is not seen in vodka. It finishes with a creamy mouthfeel and has just a touch of sweetness.

White Brandy can be used as a direct replacement to vodka. Simply substitute White Brandy in anycocktail where vodka is used and use it at the same volume. It would work well in a Tonic, Bloody Mary, or Cosmopolitan.

BRANDY

Our Brandy has been tripled distilled from Clover Hill grapes and wine. The resulting spirit was aged in new American Oak barrels. It is a caramel-colored spirit that showcases fruity aromas and compliments them with hints of oak, vanilla and caramel.

Brandy traditionally is served alone (i.e., neat) in a brandy snifter and sipped over time, allowing the heat from your hands to warm the glass. The benefit of warming brandy is that it allows the spirit to change, enhancing its flavor and aroma.

Brandy also can be served over ice or in cocktails. Traditional cocktails include a Metropolitan, Sidecar, and Brandy Alexander.
